Grilled Corn Salsa to keep your healthy summer eating on track in a flavorful way

With tangy lime and sweet basil, this grilled corn salsa couldn’t be more perfect for summer.

INGREDIENTS

FOR THE SALSA
  • 5 ears of yellow corn, husks removed
  • 2 tbsp. extra-virgin olive oil
  • kosher salt
  • 1 avocado, chopped
  • 1 c. grape tomatoes, quartered
  • 1/2 red onion, finely chopped
  • 2 tbsp. sliced basil
FOR THE DRESSING
  • 1/4 c. extra-virgin olive oil
  • 1/3 c. lime juice
  • 1 clove garlic, minced
  • 1 tsp. crushed red pepper flakes
  • kosher salt

DIRECTIONS

  1. Brush corn with olive oil and season with salt. Grill for 8 minutes, or until the kernels begin to char. Let cool slightly, then slice the kernels off the corn with a knife.
  2. In a large bowl combine corn, avocado, tomatoes, onion and basil.
  3. In a medium bowl, combine olive oil, lime, garlic and red pepper flakes. Season with salt and whisk until smooth. Pour mixture over the salsa and stir until ingredients are fully coated.
  4. Serve with tortilla chips.
