Make the most of the up-coming long weekend-the holiday we think of as the end of summer. Grilling is still a great option this time of year (and we bet you haven’t had enough barbecued chicken, juicy steak or kebabs yet!). There are plenty of vegetables and fruits still available: zucchini, eggplant, tomatoes, corn, raspberries, melon, to name a few. These Labor Day recipes are perfect for an end-of-summer potluck or picnic-

Grilled Eggplant Panini
Grilled eggplant is one of life’s simpler pleasures: creamy and rich. Look for medium-size, purple eggplants with firm skins and no mushy spots. This end-of-summer treat will be even tastier if you can find the vegetables at a local farmstand-or in your own backyard!


Raspberry Spritzer
A refreshing and low calorie alternative to sugar-laden sodas.

Peach-Raspberry Pie

This healthy peach-raspberrypie recipe combines a lightened pie crust plus the tart-sweet combination of peaches and raspberries for a winning dessert. Make this when peaches are at their most flavorful in midsummer.

Roasted and tossed with your favorite pesto, zucchini turns into an almost-instant summer side dish. 

 


Grilled Corn with Chipotle-Lime Butter
Fresh lime and smoky chipotles makes this compound butter the perfect match for sweet corn. When the corn season is over, try a bit melted on some grilled fish or chicken.

Grilled Rib-eye with Tomato Salad & Chimichurri SauceThis combination is inspired by Argentinian asado (barbecue), where the focus is on luscious grilled Argentinian beef. Serve with warm whole-grain bread.

Shrimp & Plum Kebabs

Toss quick-cooking shrimp, juicy summertime plums and zesty jalapeños with a simple cilantro-lime marinade for a deluxe meal in minutes. If you like, use peaches or nectarines in place of the plums and red or green bell peppers for the jalapeños.
